Shelby became a registered dietitian in 2015, after completing her undergraduate degree in Nutrition and Dietetics as well as her dietetic internship through Central Michigan University. She started working full time at Denver Health Medical Center covering inpatient general medicine units as well as some outpatient care. Shelby’s interest for working with patients struggling with severe eating disorders started in her internship but grew as she was offered more of a role on the ACUTE unit. She transitioned from part time to full time in January of 2018. While working at ACUTE she has been granted many opportunities to grow as a dietitian including being involved in research and becoming published. ACUTE has also supported Shelby with obtaining her CED-RD certification from IAEDP in February of 2020.

ACUTE Earns Prestigious Center of Excellence Designation from Anthem
In 2018, the ACUTE Center for Eating Disorders & Severe Malnutrition at Denver Health was honored by Anthem Health as a Center of Excellence for Medical Treatment of Severe and Extreme Eating Disorders. ACUTE is the first medical unit ever to achieve this designation in the field of eating disorders. It comes after a rigorous review process.
